I'm thinking of going to Canada in mid-May. What is the best time to buy flights (in economy class) to Canada (Travel in May)?

Possibly now? How much are you expecting to pay? The current QF sale is $1,399 return to Vancouver.

You can probably get other ports or at least open jaw (into Vancouver and return from elsewhere for slightly more - if your going further east).
 
Last time I paid $1130 return Vancouver (travel in end of May) by Air Canada (That was before covid-19). I bought it because there was a special promotion on Australian Day - 15% off.

That’s probably the latest you might hold out but all sorts of sales do pop up.

There might be some “early bird” sales starting soon. I don’t track Canadian fares that closely but the QF Biz fare in the current sale is as good as it gets - I’m off to YVR this week off the back of the Feb sale.
 
For anyone looking for J fares, the QF Nth America Sale has SYD-YVR return for $5,999. Third time this year I’ve seen that price (I’m in the middle of a trip on the first sale earlier this year).

Interesting looking at the variation in cheapest route in whY, Y+ and J across that sale.
