Virgin Velocity; best card point and flight selections

Hi All,
First post, please excuse any ignorance or errors.
Plan to go BNE to Chicago (ORD) in September for work.
My job will pay business class return ticket for me.
I would like to take spouse, one child and one infant with me for a family holiday, for as cheaply and directly as possible, all flying business class together. Happy to fly domestic economy LAX to ORD after a few days in LA.

Current plan:
I have ~18000 velocity points; spouse has ~14000.
Need ~100000 velocity points plus ~$100 for one way business ticket BNE to LAX.
Plan to try to get child’s ticket at least one way paid for with points.
So, will subscribe to foxtel (12m subscription; ~$700 or ~$60 per month) for 30000 points.
Then looking to make up the rest of the booking with new credit card introduction(s).
Eg Virgin Money Visa Platinum currently offering 30k points if you spend $7500 over first few months with the card (eg I could book my ticket and the infant ticket with this card).
Eg Virgin Velocity Amex currently offering up to 25k points with a minimum spend.

Questions:
Is this a stupid way of doing it? Are there any easier or better ways to go about it? Haven’t considered Qantas FF options but would be happy to hear if they are better. I don’t have any points with them currently, AFAIK, and haven’t investigated their cards at all yet.

Some background: only current credit card is ANZ Visa Platinum (no rewards) $5K limit, which we got a few years ago for the free insurance. Have a reasonable after tax income ($180000) and good credit record. Average spend on CC is about $2K but I think this could be upped to $3K just by shifting away from EFTPOS direct debit spending. Will also have one off trip expenses of flights and hotels up to about $20K (maybe 40% of which I will get back from work).
