coffee is burnt when it comes into contact with water about ~94 degrees. I'm going to go out on a limb and say the optimum temperature, depending upon roast, is 88-92 degrees.

How that temperature would vary when cabin altitude increases, air pressure drops and the boiling point lowers would be an excellent study for my next trip report!

my understanding that much of the airline coffee is prepared using drip filter where the coffee drips onto the pre-ground coffee. In this case the water can still be too hot, flow through the coffee too slow or simply be left too long on the jug warmer.

Going further out on a limb, the Asian and American airline coffees tend to be less to the Australian coffee drinkers taste.
