I have been looking at qantas reward flights from Brisbane to Amsterdam.

Most of the flights that appear on the search go to Adelaide first and the are on Emirates planes from Adelaide to Amsterdam.

The qantas flight lands in adelaide at 6:45pm and the emirates flight departs at 10:35. As I have never been to Adelaide airport before I would just like to ask if this is a safe amount of time to transfer through to international and get through security ect with a bit of a safety margin?

Ample! ADL is not that big :)
With nearly 4 hours in transit at Adelaide, even with lounge access, you will be extremely bored :) 45 mins would be ample in Adelaide ;)

If you land at one of the end gates it might take four minutes to get to the international gate - the only thing you need to worry about if they are on different PNR and your incoming is delayed
