There is some info HERE - maybe this should be asked there also so the answers don't get lost in this thread.
There are so many wineries in the areas you are going, in no particular order, and these are just the few I liked when visiting, but there are lots of others:

In the Tamar I like:
Stoney Rise - Chardonnay & Pinot Noir
Janz - Sparkling
Delamere - Chardonnay, Sparkling & Pinot Noir
Loira Vines - Chardonnay
Wines for Joanie - Pinot Noir
Tamar Ridge - everything but very commercial - includes Pirie
Clover Hill - Sparkling
Bay of Fires - Chardonnay, Sparkling & Pinot Noir - (Arras)
Moores Hill Estate - Chardonnay, Sparkling & Pinot Noir
Swinging Gate Vineyard - love visiting the CD - wines not as much
Josef Chromy - not been but heard good things

Cole River Valley:
Pooley - Chardonnay, Riesling & Pinot Noir
Domaine A - Cabernet, Sauv Blanc, Bandeaux Blend
Puddleduck - not been but heard good things
Meadowbank - not been but heard good things

East Coast:
Freycinet - Chardonnay, Riesling & Pinot Noir
Devil's Corner - Chardonnay, Riesling & Pinot Noir

Huon:
Home Hill - Chardonnay, Sparkling & Pinot Noir

Hobart CBD
Glaetzer Dixon - Chardonnay, Riesling & Pinot Noir
Gas Works - range of Tassie wines

Derwent Valley:
Stefano Lubiana - not been but heard good things

Tassie wines are expensive.

When I was there we only visited 2-3 winery and I can only remember having a nice chat with Tamar Ridge where I was able to buy some pretty old vintage of their Riesling.
If I was to go tomorrow, I will definitely drop by Josef Chromy as I have really enjoyed two of their wines lately: The Sparkling and the Bohemia Pinot Noir.
