Maybe a pub crawl down George & Pitt St- still a few pubs that are pubs fortunately
 
So I just use normal Amex has contactless chip card to tap on and off at the station..... nothing else to organize..... why is this not national?

Because transport is a state responsiblity and some states (im looking at you Qld) like to charge you to buy their transport card. At least in NSW opal cards are free, any cost is given as credit. But not needed since you can pay with your credit card or mobile.

I have stopped carrying my Opal card ages ago .. just use my credit card ... too easy, and get all the benefits.

As for things to do, I personally enjoy going up observation towers whenever I'm in a new city ... so there is Centrepoint Tower (or whatever they've called it now days). Crown has one too, but its super small and you have to book it well in advance.

Speaking of Crown, you could also go down to visit Barangaroo, have a look around the park, get a drink at Crown etc. The Cutaway space below the park at Barangaroo is hosting Biennale art exhibits until 13 June.

Those requirements are possibly mutually exclusive! But if you’re happy to catch the light-rail (with stop outside racecourse), then pretty much anything from Circular Quay, thru to Central station, Surry Hills and onwards is in play.

Alternatively if you’re into IHG, the CP at Coogee Beach has rooms with nice views and plenty of decent dining options, but taxi to venue.

Edit: apparently there’s an Adina at Coogee also. There are some boutique hotels in Randwick also - short distance back to racecourse. I’d probably look around Central / Surry Hills.

Just beware that it is very slow
It’s sped up a bit but yes, avoiding the CBD stretch is advisable. Starting from Central or Surry Hills is probably ok. About 20 mins to the racecourse (v 10 mins by car going against traffic).
