Stopover on Velocity Delta reward redemption

I've been looking into some Velocity redemptions on an upcoming US trip, but I'm having trouble finding information regarding stopovers.

Fare rules say one free stopover is allowed, which I take to mean a stop of more than 24 hours (as opposed to a transfer). Is it possible to book such redemptions online, or is this a Service Centre job?

As an example, I'm looking at ATL-SLC-SFO. Availability for each of the sectors individually is ok, but there seems to be no way of choosing a certain routing and splitting it over different days (i.e. creating the stopover).

My reading has led me in many directions, including analysis of the MPM of the original route. Not sure how this factors in to Velocity rewards, but can't see it being much of an issue (adding SLC only adds 50 miles).

Does anyone have experience in this type of redemption?
