Just interested to know which configuration of the A350-900 gets used for SIN-SEA?

Does this also apply to the B777?

My reason for asking is we came SIN-MEL on a A350-900 a few weeks ago in J and the seating was awful. We have the same flight number in late Apr on a B777.
Expert Flyer has it as F/J/Y configuration.

SQ only has a single config 4 class F/J/W/Y for its 777 (only single type 777-300ER). In some routes W is not sold as W but available to Y pax for a fee

I guess my real question is how do I find out what was config the A350-900 that we travelled on last time and what was the seat. Not sure we could handle that seat again. I would rather sit in W or even Y if there was enough legroom. (...or they could UG us to F)

Also where can I find the J seating types for each configuration?

For SIN-MEL on an A350 it used to be the "Medium Haul" or "Regional" config that they ran, however recently (or as far back as around a year), they switched over to the "Long Haul" version.
The main difference in J between the Medium and Long haul versions is the way the seat converts to a bed. The Medium haul version is electronically controlled and uses buttons on the side of the seat to slide into bed mode, whereas the Long haul version required pax to get out of their seat, and flip over the back to form the bed.

More info can be found here: Medium Haul and Long Haul. My guess is you copped the Long Haul version and were unimpressed with the seat back having to be flipped to make a bed.
Others aren't impressed by the Medium Haul J product citing seat width concerns but I'm a big fan of the Medium Haul (and it's newer too...).

2)Do you remember if W was available on your flight?.

Maybe you should try for a bulkhead seat which those in the know always try to book? They’re available to non-PPS members 4 days before the flight.
