Seoul for 8 nights

At the end of June, I will be in Seoul for 8 nights; I have 3 free nights at the end after the conference finishes. Any suggestions as to what to see and do in Seoul? I'm also thinking of spending 2-3 nights at Jeju island as 8 nights in Seoul might be too long...Anyone been to Jeju? Is it worthwhile?
 
I spend about a week in Seoul in July each year, I love it. Visit the DMZ and peer over the border into the north, go out to the amazing fish market for dinner, buy your food and then walk upstairs and have it cooked and visit the palaces, museums and wander along the mid city stream with all the locals after dark. There is plenty to do, and mid year is a great time to be there.
 
At this stage, I'm planning to spend 2 nights at Jeju island (Jeju travel guide - Wikitravel). I clearly can't count as I'm actually there for 9 nights which is too long to spend all of it in Seoul!
 
Any more recent tips on seoul? I'm going there and Jeju in april.
In Seoul, we did a tour to the DMZ: GRACE TRAVEL :: View Menu - Demilitarized Zone (JSA) / Panmunjeom and visited the War memorial museum which gave a great insight into the Korean war.

We visited Noryangjin Fisheries Wholesale Market (노량진수산물ë„매시장) | Official Korea Tourism Organization where you can buy fresh seafood and they will take you to a nearby restaurant that will cook it for you.
