selecting seat when booking online

can someone tell me which airlines let you pick your seat when booking online, looking at a flight from either nz or aus going international

That's a pretty big ask "going international". From Oz alone your options are (not a full list)

UA
Delta
QF
SQ
CX
BA
VA
VX
Virgin Australia
Pac Blue
JQ
Air China

And a host of others... you might get more responses if you are a little more specific with the possible routes.
 
I was able to pick my seats on Finnair (Cathay Pacific) on a flight that I almost booked the other night.
 
with Emirates I think you had to be a member of their mileage club (was free), not sure if it's still applies.
 
NZ provides online seat selection.

Some seats are reserved for Airpoints/*A elites.
