I was looking at some options to get to Rome (or somewhere in the area). So, I selected Sydney to Rome, and wanted PE. Sector to Dubai was no problem, but beyond that, no PE was available, so it offered economy only. What I was surprised by was the apparent lack of any simple way of choosing business for that sector. Is there some trick that I’m missing. I know that I could just break the trip into two sectors, but the price for that was ludicrous.
 
I have not found a way to get mixed fares online unless they involve a "downgrade" such as you describe where economy substitutes for J or PE. A travel agent might have more options.
 
Yes, if nothing else, a decent travel agent can put a direct request into the airline “off line” for an exemption of a rule. Any rule basically but obviously the simpler, the more like need to get approved.

Not all EK routes have PE yet - they may be running the non-refitted PE A380 or 777 to/from Roma
OP's issue is the website defaults to Economy on those sectors and can't "upgrade" to Business.

I'm just at the exploring stage at the moment, so I'll just ask one of the locals. Singair do what I want, and they're another alternative.

If you can get to CGK (and back), you can fly business return (CGK-Euro) for less than PE from Oz on several airlines.
