I currently have an Air NZ flight booked from AKL to HKG then CX to LHR in J.

I want to credit the CX leg of the trip to my Qantas account not my Air NZ acct.

Is getting a reprinted boarding pass in the lounge/gate to show my QFF number the only way to do this?

If it's on CX code I'd think you might be able to log into CX MMB and change it there.

If you are on a NZ codeshare, then no QFF

Maybe just remove your FF number from the booking, for the NZ leg do a retro credit and add the QF one in when you get to HKG?

Well it worked! By requesting a new boarding pass with Qantas FF number in the lounge at Hong Kong, I received my Air NZ points on the outbound Air NZ flight AKL - HKG (original boarding pass) and Qantas status credits/points on the HKG - LHR leg based on my reprinted bp.
