Mid range restaurants in Melbourne for a Sydneysider

Following on from the Epic restaurants thread thought a midrange thread would be useful. There are a number of mid-upper range Sydney restaurants which offer very good value tasting/degustation menus for (sometime well) less than $100 either regularly or time to time, thinking Atelier (now sadly closed), Oscillate Wildly, Bentley, Fovueax, The Devonshire as examples.

Any recommendation of similar good value but still very good food (without breaking the bank) restaurants in Melbourne? Extra points for BYO!
