Melbourne - Hotel or apartment stay

I am going on my first trip to Melbourne in a few months. Living in Perth, I usually travel north rather than east so this will be my first trip over east. Problem is I cant make up my mind on where to stay. I have been looking at hotels and apartments and I am not sure what would be best.

I do like my space and I like a good breakfast, but I understand I can get a great breakfast on every corner. I also like to live in the middle of everything, but also peace and quiet. And I do love a nice bed and a good nights sleep.

Any great tips of the week?
