After a little advice from the frequent HK travellers ...
I will be staying in Hong Kong for 3 nights in August with my other half on the way back from NYC.
I was looking for a hotel recommendation - I have stayed once before in Hong Kong in the Langham Place MongKok, which was good. Wonder if there's somewhere you have stayed though that you thought was great with with a good view, swimming pool, central location and nice relaxing space AND comfortable beds :-)...

Hi, last few times in hk, I have stayed at either langham place, royal plaza, or eaton smart.

eaton smart....basic club room and club floor. It is actually in lower ground, so no view and very small. Service just ok
royal plaza.... They were renovating the club levels, so can't tell you about that, but the breakfast downstairs was good.
langham place.... My favorite, staff amazing....club floor great, with food and drink avail all day really. Rooms just fine.

Sorry...should add about pool.

eaton smart...all enclosed upstairs, I found it a bit stuffy
royal plaza....nice open pool area, next to ggym
langham place.....again, my favorite....upstairs through the beautiful spa, open roof, great views

(it's Friday...too many white wines & didn't read your question completely )
 
There are a number of threads here about this, depends on your budget and stuff, but I stayed at Metropark Causeway Bay, which is ~3 MRT stations from Central. Great views from the Exec Parlour rooms (more pricey than 'normal' rooms but they are spacious, on high floors, and give access to the Exec lounge, which is adequate rather than brilliant), and a nice rooftop pool. They are not quite in the the 5 star league, but nice enough anyway, and have a 10% discount promo for stays of 3 nights or longer.

Anyway, there is plenty of choice at plenty of price points.

As others noted above, there are so many choices in HK which can be very different based on your budget and where you are also going to go.

Personally if you are visiting though, I would recommend a hotel near the central area as HK island would be where you spend most of the time on the trip. The view is definitely better from the kowloon side but staying at central does give you the option to hop onto a star ferry and cross over to kowloon to catch the view as a compromise.
 
We love the Langham at Kowloon. When we've stayed near central we've stayed at the Island Shangri-la which is gorgeous, amazing Shangri-la service and great views.
 
Thanks for your help everyone! :-) It was decided when I found a deal at Langham Place for 3 nights for the price of 2 in a suite in the 36th or plus floor! All booked and now just 12 weeks to go before our month off around the States :-) looking forward to trying out CX J product for the first time from NYC to HK and, ultimately Melb, too.
