Votes are ahead for August, but July is close behind. I have been in contact with some local foodies and Beverage enthusiasts trying to look at an itinerary. So the following one is a work in progress. It is modifiable in the planning stages but should give people an idea of the types of insider activities that can be arranged.
Stop 1 start at Moorilla cellar door, able to sample and purchase Moorilla wine and Moo Brew Beer. At the site of MONA museum
Stop 2 Domaine Dawnelle and Killara Distillery. Killara owned and operated by Kristy Booth(Lark) one of the few boutique distillery’s worldwide owned and operated by a woman. Produces single malt premium whisky and apothecary gin. Domaine Dawnelle micro winery producing Riesling Chardonnay Pinot d’Or and Pinot Noir. These are both at the same site and open upon request
Stop 3 Polley’s Estate at Richmond for a wine tasting and lunch. They have Tasmania platters of fromage and charcuterie, hot and cold salmon, etc.
Stop 4 tasting room at Richmond. Gin, Whisky and Vodka, three tastes each for 5-10 dollars per head.
Stop 5 Last Rights Brewing at Cambridge or back to town to Shambles brewery or Hobart Brewing company. Lots of reasons to visit any of these micro breweries.
Dinner TBA.

This itinerary would require transportation that will incur a cost eg mini van. Hire. Some venues request small fee for a tasting, which is often waived if you make a purchase as well. If this sounds enticing, I will work out a costing.

I am chatting to a boutique bar which has over 80 gins on offer, if Gin is your thing, I will attempt to arrange a special tasting there. Obviously this is only a small slice of what greater Hobart has to offer and a second day can easily be arranged. I have voted for August or later, however any date in August would have to work around @frankie heading to ZQN and my mum attending a conference in ADL a week later (which I might attend too). October is out for me as a later date, due to the AFF Annual Gathering, but September could work.

I'm interested regardless, provided dates don't clash and I have enough time to get a good fare/hotel.

That is a lot of tastings in a short time I would have thought the maximum in one day would be three visits, including the tastings at lunch.

Indeed, I may be too adventurous, but it would be an amazing day. We can reduce the numbers down to less, have the others spill over to the next morning. Allowing time for travellers to get to the airport or the trip home. There are many gins available RooFlyer, as you well know, we could change the last stop from beer to gin? And Doug we did 4 tastings and another food stop last time if I remember. So only added 1, the last stop can be made loosely eg not one we have to book, and it can be missed if everyone has had enough. We could do some sight seeing on the Sunday morning to assist in the recovery.

Remember we won't have the long drive out to and back from, say, the Barossa, so I think four is achievable, but if there is a Sunday 'tail', then five might be possible :)

My thought was that after tasting several wines/spirits/beers at each of four different places your palate would be shot and you may not be able to truely taste the subtleties of the wines/spirits/beers.

I was having that trouble at the second winery after Rockford's :p
 
We could move the first stop to Sunday and combine with a trip to MONA museum, would that be of interest to people? Idea is the interested group member could come to the museum and do a cellar door tasting after. Or would people prefer a trip to Mt Field, in which case a tasting at Moorilla on the way back, but this would be influenced heavily by the weather which is highly variable in August in Tassie.

That's the 'Taproom' in Sandy Bay, a few doors from Magnet Court. Tiny place, I thought it was a coffee shop, but its a sort of micro-bar with those, and a lot more, on display.
