HKG Stopover extended to 9 hours - CX Business Lounge or tour around HK?

My business class redemption flights MEL-HKG-BKK just got amended by CX with the HKG stopover extended by almost 8 hours. It leaves me with a 9-hour stopover and choice whether I should glutton myself in the lounge for that extended period (I could be at least partially productive & do some work on the PC) and/or explore other airport facilities or go through the immigration & security procedures for a tour of the city proper.

I've never been to Hong Kong before, so I'm completely open to suggestions to while away the time.
 
I’m not sure what’s open at HKG, haven’t been there since late 2019.
I used to crawl around the CX Pier and Wing, QF, EK and Centurian lounges but someone may have up to date deets on what’s currently open.
I do know that QF closed their lounge.

I have had a 9-hour layover before in HKG and went to visit the Big Buddha. Obviously that's not an option now with Hong Kong closed to tourists (or quarantine required).

The CX lounges are nice, at least.

Hong Kong to end mandatory hotel quarantine for travelers

It seems that inbound travellers will now have to undergo three days of "home monitoring" as well as undergo several mandatory PCR tests. Certainly not an option for a transit stopover.
Just in case anyone is reading - hope no one is trying to leave the airport during an extended stopover in HKG. This is currently not possible as you need an address upon entering (hotel or otherwise). Any extended stopover you will need to stay in the airport and try not to be bored in the lounge.
