I only heard of this place now.

So shoot me, but I am passing through Singapore in a couple of days, so maybe time to have a first and final call.

Maybe Skinny (son of Fatty) will still do the apocryphal "Qantas Standard order" I've not ordered it preferring my own.

Apparently it's BBQ pork ribs, chicken claypot and some Tsingtao beers. Can't go wrong here

I would add in the Kway Teow, any fried bean curd and Sharks fin.

Don't know if there are standard orders for other airlines

I don't see BBQ pork ribs on the menu. I do see pork spare ribs, but it doesn't necessarily say they are BBQ'd, and I'm fair (fare?) gaming that they won't be, e.g. they may just be braised; the Chinese text doesn't suggest BBQ action unlike the BBQ pork also on the menu, which is the staple cha siu, not ribs, though. There's also black bean pork ribs, which I assume is a version of the yum cha classic which is also delicious.

The article given by @Hvr seems to imply that the claypot chicken is rather spicy, which is interesting as again the menu text (or at least in Chinese) doesn't seem to imply it going that way. But if that's what it is, then so be it.

The Qantas order seems to be also accompanied by some spring rolls.

Most of the time, we didn't even order. Stuff just came, and we eventually paid the bill. There were various theories as to how the bill was worked out, but $30 flag fall, and $30 per hour seemed to work. When Fatty was alive, it was even less possible to work out, and probably varied depending upon which airline you were from.

It's very sad to hear that it's closing, but I guess it's a generational thing. It's such a well known institution that you expect someone would take it over, but without Skinny and Alvin, it just wouldn't be the same.
 
In a Cantonese/Chinese restaurant, you could order from the menu or just tell the manager what you wanted which may or may not be on the menu, or a variation of the menu - the price then is whatever they come up with, which is usually in the ballpark of the dishes in the menu

Which is why sometimes you see stuff not on the menu
