Aside from the 1,200 mile fee to extend points by 6 or 12-months, is it possible to book a fully flexible flight as far in the future as possible, with the intention of cancelling it later, just to prolong the points expiry?

Correct, miles retain their original expiry date even after being used. So when cancelling any that would have expired by the day you cancel will automatically expire
I think you can change the booking rather than cancelling it, as long as the change doesn't require the ticket to be re-issued. The articles below might help.

But if you don't have a specific destination or flight in mind, another option would be to transfer the points to Velocity. Yes, they'll lose quite a bit of their value, but at least you won't lose everything.

Yes, I have certainly changed tickets in this scenario, including in one instance well into the future ( ie beyond the normal 11 months of the original booking). I did have to talk to a supervisor though.
Interesting! Just to be clear, you did the same thing I am contemplating - booking any flight with miles well into the future then doing it again until you actually changed it to a flight you wanted?

It should be fine as long as the website lets you make date and destination changes. As soon as the website spits out an error, which could be for something as simple as a schedule change, then you will be at the mercy of the call centre. The humans who work there are very strict with the 12 months ticket validity rule.

Yes. In my case it wasn't even the same destination (which may have been why I had to do it via a supervisor).
