ETIAS and Schengen rules for 2023

Trying to plan a big trip to Europe for 2023 and as an Australian I am very confused as to where and how long I can travel to Europe for with the introduction of ETIAS and the Shengen rules. I would have liked to book a 5-6 month trip but aware that you can only visit the Shengen countries for 90 out of 180 days and read on ETIAS website that other countries on the waitlist are also needing to be included on the ETIAS application like Croatia and Cyprus but I think (not 100% sure that you can travel to the 'waiting" countries up to 180 days in total.
My itinerary looks bit like this Sydney-London 19th March will stay in UK until 31/3 then start a tour AMS -AMS 26 days mostly Schengen countries Tour thena couple of nights there in AMS train to Zagreb arrive by 2/5 maybe stopping in Germany along the way for a few days then Sail Croatia until 13/5 then Montenegro and Albania for the rest of May - Greece most of June and wondering if I could go anywhere else for a long amount of time and can I go in and out from Shengen to Non-Shengen?
Thank you in hope someone can help my confusion and I can continue booking.
