Entering countries with Criminal conviction [Europe/UAE]

I am a 63 year old woman who was convicted of "stealing as a servant" 8 years ago. I was sentenced to 16 months imprisonment and served 8 months. This is my only criminal conviction.
. I hold a New Zealand and an Australian passport. My husband and I are planning a cruise next year and we are looking at visiting Dubai, Croatia, Denmark, Estonia, Finland, France, Germany, Greece, Italy, Norway, Russia, Spain, Sweden and Turkey. All of these apart from Dubai will be as part of the cruise - so will only be for 1 day each (apart from Russia which is 2 days) According to the information that I can find on the internet we do not need Visas for any of these countries - Russia states as long as participants are on a ship organised tour no visa is needed. BUT with my criminal conviction I wondered if anyone can tell me should I apply for a visa? I did write to the Italian embassy and they say I will be fine. Does anyone know if the question "do you have a criminal conviction" is asked on the entry cards? and also with Dubai we only intend to be there for 2 days. I can not really find much information on the internet apart from the fact that I do not need a visa (there is nowhere that says anything about a criminal record) and most opinions are that I will be OK. I would like info on arrival / entry cards though and if anyone else has travelled to any of these countries with a criminal record.

I would contact all the embassies and put it all out there and see what is said.

I would apply for Vias's in countries that you can apply for one regardless of if you need one or not.
