I have a long layover in Dubai ( arrive 06:00 and depart 02:30 the following day. Does EK do layover packages and has anyone experienced one ?

Is your layover between flights the shortest available (for example only one flight per day) or are their earlier flights than the 2:30am one you're booked on?

If it is the shortest connection then you'd be eligible for Dubai connect. In short Emirates provides included hotel accomodation and transfers to/from the airport:
