I've tried to find a recent list of dom flights leaving from Terminal 1 - ones I have known of in the past have gone. Any suggestions?

Very very few these days, the only ones you can go for, not daily either, is catching a JQ flight to MEL, some days a week, about midday.
Maybe rarer still, JQi SYD to CNS.
Since QF8 stopped using the 747, under QF itself, its zilch chance. Also, since QF81 stopped flying via ADL, another chance also gone.
Go to the JQ website, see what days SYD to MEL have a "business cabin" and book, add a plus package/deal to earn QF FF points and QF SC, go to the counter 3 hours before a flight to check in, then go through immigration and customs, thats it.
But coming back to SYD, you will have to get a JQd flight, or QFd flight.
Edit: ah, you want a **list**.

Wow, JQ17 seems to be the only one, only on Sundays. At least I get to hang in the Flounge while I wait!

On the weekend, it could be JQ17 only, but weekdays, there is still JQ35, Wed I believe.
QF would have the list somewhere, but if it readily available, who knows, would QF be willing to send you the info.
AN an in Ansett didn't do it, I have been around since 1985, and up to when AN passed away, never heard them do it.
Until JQ came along, QF was the only one. So they would the records somewhere.
Now adays, JQ is the only one.
There is still the "trick" of catching that EK metal flight with a QF flight number, from various east coast cities to AKL and CHC if you want to "indulge" in the F lounge.
**JQ only allows you to check in 3 hours prior to a flight, can't do OLCI with that domestic passenger on an international flight**, and EK only lets you have your passport facial page scanned 3 hours before flight too, so, no long suaree in the QF F lounge!
Unless spending $$$$$$ and going further (US/SIN/DXB/SEAsia).
I might pull off the SYD QF F lounge visit (SYD - AKL/CHC), if they don't close it for their "tidyup" come this Dec.
