If I don't use my comp status for hotels and cars can I use them in the future say 3 years into maintaining gold? Also if I use Plat comp status will it cancel out the Gold one?

AFAIK you don't have to use your comp status straight away, at least for Hilton anyway. I was Gold for several years, Plat for a year then dropped back to Gold and only opted in for the Hilton Honors comp status last year, as I will be travelling in the US this year and staying at several hotels in the Hilton chain so will finally have a chance to make use of Honors Gold status :) .
