Booking a Multi City cash fare in Europe

Has anyone booked intra Europe multi city flights paying cash?

I have an existing J Qantas multi city points booking "AMS-LHR-DUB-HEL-REK-HEL" but thinking about changing to a cash fare as redemption rate doesn't seem that good. I can find a cash price on sites like Skyscanner, Google Flights etc but when I try and find on actual airline sites (AY, KLM, Qantas) they advise that these flights are not available and cannot be booked.

Don't want to book through some third party site. Google Flights did take me to the actual airline sites but I had to book and pay for each ticket individually which seems very risky if something were to happen when booking my final flight after finalising and paying for all the earlier flights.

Any suggestions as to how I can make these bookings?

You may well not need multi city. It could be a combination of one way, multi-jaw, with stopovers etc on multiple tickets. All depends on fare conditions etc.

It was an award booking some time ago, but an example of things that work. Needed to do DUS-xLHR-CDG. Seemed to be a classic open jaw, but as an award (using Asia miles) was best booked as a one-way with a stop over because of the distances involved.
