Yes the custom is that sake cups are always filled to the brim. Often the cups sit in a saucer and it is also customary to overfill the cup so that Sake flows into the saucer. It's an expression of generosity.

Sake is typically mild to the palate - very suitable for me as I am not into alcohol in general
There are cold, warm, clear and cloudy sakes

sometime ago I asked CIL about this menu from a Japanese restaurant in Sydney. He suggested these:

First one is a good starter. From Yamagata prefecture and "Junmai Gino" means fruity /fresh and 2nd one is an alternative to the first. The bold names are the names of the brewer. So he picked out the famous brewers.

Third one is a warm one
