AA 73 to QF 43 as a result of very good pricing in AA Y+ ex DPS
With an Australian passport, exiting to explore a bit of Sydney should not be an issue, but what of the potential "gotchas" in doing that.
Recently there has been a scarcity of domestic wandering

Public transport delays the biggest one that occurs to me … and backup-taxi isn’t that expensive as an alternative.
Mate of mine met up with friends doing exactly this a few years back (I think Hong Kong to Auckland or back the other way), no problems, he picked ‘em up at the airport & they had a long lunch somewhere with a nice sunny winter water view. :)

I hope checking bags right through wouldn’t be a problem, AA to QF? And if not surely there are lockers (have done this at LHR - wife’s flight was 8hrs after mine so 3 of us shared a taxi to the airport, I flew home, we checked the ladies’ luggage into lockers and they spent some time in the city without bags shopping on the green squares from the Monopoly board).

In terms of passport control etc there will be no issues, head through a smart gate and be on your way.

Baggage will be checked through the whole way and boarding passes issued so no issues there as well.

seems to be a common ask

That one had a twist with an Int operated Dom sector!

Can't see any real issue, just give yourself plenty of time to get back to the airport in case the trains decide to stop running. (they randomly seem to do that)

The trains are 99.5% of time all good, though sometimes a little out of sync from the schedule. But a rideshare from the city or Redfern direction is only about $30 at normal times.

If you are alone, train will be cheaper (but would be the cheapest but you'd need to change buses, if you go to the city). If there are two of you, a rideshare comes close, and with three or more, a rideshare / taxi will be more affordable for the group in total.

Agree, the trains are very reliable. Yes, like anywhere in the world there can be disruptions or weekend track-work etc but not that common. The train at least is more deterministic getting to/from airport/city. Morning city bound and afternoon outbound car traffic is horrendous around the airport and best avoided.
