I have been desperately scratching around the past few months trying to find 2 x F seats from SYD-LAX, MEL-LAX or SYD-SFO around 26/12 - 28/12 using my Qantas points.

Nothing seems to ever be coming up on the Qantas site. My status recently dropped from Gold to Qantas Club-Silver. OUCH.

I've been quite lucky with availability for points in the past, and apart from parting with my hard earned cash and buying the seats, or attempting to increase my status (and have more seat availability), are there any tips? ?

Hmmm, you can try ringing and asking :)
But also consider via BNE or is there no F out of BNE ?

No F out of BNE.

F are as rare as hen's teeth. Sometimes you'll need to call (which is hard enough unless you are WP); other times you'll just need luck or try and get seats right when they are released.

Considering that dates you chose are in Christmas, I really don't like your chances......

Oh, and finding F seats on a 744 service is much easier than a 388 service.

Just had a try for myself - and I can find squat all except some scattered Y seats in Dec let alone Jan. Looks like you might be out of luck..... unless you feel like splurging (viz. wasting :p ) your points on an Any Seat award...
