I’ve never seen a single EK staff member ever care about carry on across all classes. FWIW I’m a big Rimowa fan with the soft cover so I can put my toiletries in an easy to reach location though DXB doesn’t require you to remove toiletries so hang onto all amenity kits when transitting.

If you have room then why not but I can’t be bothered as I’m always on the move and usually maxing out HLO weight. I always test their headphones as soon as I sit down and if it’s working I find they do the job reasonably well and if not get them to reset earlier than later.
