If I were to book a classic award flight as PC, then change the date at a later time would it still count for DSC (assuming it's inside the offer window still?)

I'd happily take one or both but would recommend you keep them for gifting if you truly don't want them.

I had success with a CX BNE-HKG-LHR booking, could find both legs on multi city but not as a BNE-LHR search and it errored out if I tried to book them as seperate legs. Call centre were able to book it for me.

Has anyone else had their progress disappear for the second year? I had completed 3/5 leaves, and recently offset a flight to get my 4th, with just the quiz remaining. Went to check and it shows as 100% completed, but only has the expiry from the first time I completed it?
