Ok this is probably a silly question. I'm doing QF81 SYD-ADL next week with checked baggage. Will the baggage come out on the carousel in the customs hall, or the regular domestic carousels?

Silly question part 2: I'm actually going MEL-xSYD-ADL - when checking baggage in MEL, will I be able to use the automatic bag drop?

Ta :)

Not sure if the kiosk/bag drop would work but you will need an international connecting tag attached to your bag so that the handlers know to send it over to SYD T1. You also need a D sticker that only the counter can give you. On a side note MEL QFd check in may not have D stickers and you might need to stop by the QFi SYD T1 check in to obtain the D sticker.

To be absolutely safe I'd recommend you see the service desk at check-in. With the NGCI check-in working as efficiently as it usually does, it is a pretty quick process and will save you any grief at the other end.

I can confirm that your baggage will come out on the (only) baggage carousel in the Customs Hall. With a domestic boarding pass with the orange D sticker you'll be waved through by the customs officer.
