So restaurant owners pay their staff peanuts and then cheat them out of tips as well?

Yeah scumbag behaviour at its best. When in the US I paid my tips in cash and noted the appreciation of staff.

I resent paying tips but appreciate that it is part of their wage structure.
 
I have had the best and the worst service in the US and of A (Borat)....
Tipping does not change service level.. overall busy-ness of the restaurant does..
When its slow or excessively busy..bad..moderate ...good

I try to pay in cash..but if its 5star i dont have enough cash on me

You could pay for food and beverages by card but the tip in cash.
 
Our last trip overseas was Canada, very similar to USA, paid the bill via card (do not agree pressing the prompt "do you wish to include a gratuity") with the tip in cash. At least that way you control what you believe the service was worth with who provided that service.
