I won’t requalify for Diamond status and I’m thinking about the Diamond Status Extension. I have a lot of of points which I want to use for a long trip in a couple of years.

One of the criteria for Diamond Extension is that your status expires on 31 March 2025 (I meet all of the others). Does that mean that the Diamond Status extension can only be used immediately after the status expires? Or can I choose to use it in 2026 or 2027? Keeping in mind that the extension can only be used once.

I’m not likely to travel enough to qualify for Diamond again so I don’t want to lose the opportunity but I don’t want to waste it if I can use it later.

You need to apply for it b4 you lose your Diamond status (ie b4 31 March)...that's my understanding and what I did last year.
