Recently I discovered the CX flight I'd booked from Melbourne to Hong Kong CX 104 had been cancelled.

CX have booked my partner and I on an earlier flight (CX104) from Melbourne to Hong Kong that now gives a 12 hr 20 min stop in Hong Kong before CX 536 to Nagoya.

We've booked at the nearby Regal Airport Hotel. I appreciate we will need to pass through immigration to exit the airport but would we expect CX to book our luggage right through from Melbourne to Nagoya?

We took it for granted that luggage would be booked through on the previous flight combination CX 178/CX 536 that gave a three hour five minutes connection at HKG.

I stayed at the Regal Airport Hotel recently and it's only a short walk from the Arrivals Hall in case your luggage is not checked through...

A couple of years ago we had CX flights BKK-HKG-BNE.About a 14 hour layover in HKG.stayed at the Novotel and our bags were booked through to BNE.

Likely.

But if it was me I'd be keeping the luggage with me given the length of the transfer period.

Take your luggage with you. The Regal is under the airport roof line and you can use the trolley all the way there. (Not far, just go left out of customs).
