We've got an AMEX card each.
By the looks we'll need to signup to KrisFlyer each, and transfer points over.
When we make the booking in each how will we know it's not trying to book the same seat? So only one will actually purchase and the other might get stuck without a flight.

You could always just search for two award seats. If 2 seats show as available, then booking one seat should not exhaust the inventory.

If in doubt, you could book over the phone.

One technique I use when I want to book flights from 2 different accounts for 2 people is that I book 2 one ways on one account and then the 2 return flights with the other account.

Mostly I fly in and out of different cities and so this works well for me.

You can set up upto 5 nominees at a time per Krisflyer account for whom you can buy tickets .
Also you can transfer points from one persons MR account to the other .

There is a paper form to be filled out and submitted . Should be able to locate it through google .

Mine was fully-automatic without any intervention on my part at all. I had Edge for years and when I got Explorer, I received an email within a day or so stating the two cards (and their rewards) were now linked. I think the main factor was that I activated the new card AFTER I logged into my existing account.

I was referring the transferring points between 2 people . Options May not be available anymore as form not available online . Best to check with Amex cs .

I am sorry; I confused your question with that of linking Edge and Explorer cards (this was topic in another thread). My bad.

How do you transfer from one membership rewards account to another?

The form is called "MEMBERSHIP REWARDS – REQUEST FOR POINTS GIFT" you fill it out and scan or photograph it. Then login to you Amex account, and click on the "Account Management" menu across the top of the screen, and then click on "Document Upload". Here you can submit your image of the filled in form. Once you've uploaded the document, just ring the Call centre and ask them to check the form has been received and that it is getting sent through to the Rewards centre to be processed. I've done this a couple times and the points have been transferred within 3 working days each time.

There is a limit of 50,000 points per year, which I haven't tried to exceed.
Also if you want to transfer points from Gateway MR to Ascent MR there is a 0.5c charge per point. But I see this as useful overall as I'm aggregating the points from mine and my wife's Explorer cards into my Platinum Edge to then transfer to either Asia Miles or KrisFlyer and Ascent points have a better transfer rate to Airlines.

A handy note for the end of the year is the transfer cap of 50k points is calendar year based, so can do it in December and then January next year.
