Pompeii might be a bit tight if you're time constrained, as it's at least 2.5 hours each way from Rome, with at least one change of trains involved (in Naples or Salerno).

It might be worth considering a visit to Florence (Firenze) which is only 1.5 hours non-stop from Rome and most of the sights are within easy walking distance of the main station in Florence. I do these sorts of day trips from Rome from time to time and they can be quite fun, but watch out for the fairly frequent strikes and go-slows.
