Why can't we just use bunks ala crew rest or Tokyo bathtub capsule hotel.

the issue with the use of bunks is passenger action during an emergency (oxygen/lifejacket/seatbelt/getting back to a proper seat) and during an evacuation (if there was a sudden descent and landing).

Crew are trained to for emergency procedures for bunks, and don't require the supervision a passenger would (and could get in the cabin).
