Split class booking

In September I want to fly QF/EK from MEL to AMS. The budget for this business trip is to fly W from MEL to DXB and J on EK from DXB to AMS and return.
Can I book this online, on the phone or are bookings of this type not allowed?

EK recently sent me an email for split class bookings ex AU - J class to DXB followed by Y class to europe (they were $6000 return). They outlined the booking process in the email - basically multi-city (EK site) and select the appropriate class for each leg (J/Y/Y/J).

I might need to be a bit more specific. We are allowed Y+ on the MEL-DXB leg, so I guess that's QF metal. As Y+ is not available on the DXB to AMS leg we are allowed J. So I guess that means QF to DXB and then EK to AMS. We prefer not to go via LHR and want the shortest possible connection times. QF status is very important to some of the people traveling so no CX or other OW carriers. Just after a way of booking this without a TA or a phone call.
