Why does Sydney Airport need your personal details including date of birth to connect to the wifi?

Yes that’s when VPN’s come in handy for geolocations blocking.

It has been there for long time though - since SYD airport offered the first new free wifi in the airport.
 
I gave up using free Wi-Fi in Australia years ago. With my $25 plan I currently have over 600 GB of data rollover. (Perhaps it’s because I don’t watch much video)
I actually find that leaving the phone Wi-Fi on is a problem as the phone keeps trying to connect to Wi-Fi’s and slows down.
 
We don’t ever use free wifi as we don’t need any more potential scammers in our lives. Some scams we have been receiving have been pretty well crafted.So it is no thanks for us.
