I'm flying via DOH and have a 22hr transit - arriving 11.50am on 6/7 and departing at 8.25am on 7/7.

Do I need to get a visa in advance or do I arrange it all at the airport?

This Qatar Govt site on transit visas seems to suggest I need to apply to an embassy ahead of time: Transit Visa - Hukoomi - Qatar E-government

However, the Tourist Visa page says I can do it all online instantly: Tourist Visa - Hukoomi - Qatar E-government

What is actually required?

All can be done on arrival, so I'm told. I shall report back with first-hand experience within the week.

You do not need to organise any visa before hand.

From your second link, the Tourist Visa page:

The State of Qatar issues Tourist Visas on arrival for nationals of 33 countries:
Andorra, Australia, Austria, Belgium, Brunei, Canada, Denmark, Finland, France, Germany, Greece, Hong Kong, Iceland, Ireland, Italy, Japan, Liechtenstein, Luxemburg, Malaysia, Monaco, New Zealand, Norway, Portugal, San Marino, Spain, Sweden, Singapore, South Korea, Switzerland, The Netherlands, USA, UK, Vatican City.

In 2010 when I went there, it was VOA. If I recall correctly, I paid on card as I didn't have cash.

Just don't have any wine in your luggage. Mine got taken off me, but I was able to collect it 36 hours later when I was departing.

Able to report back about visa and the insistence on cash on hand requirements?

Very poor form on my part for not reporting back earlier.

No cash. It is all done by EFT. I used a credit card. It's done at the Immigration point. That is, you don't go to some other desk first to get a visa, you simply line up for the Immigration check with each point having its own EFT terminal.

Is it possible to get a visa only for a quick visit to the city? I've got a six-hour overlay so I'd rather catch a cab and go for a stroll in the city than sit around the airport. As far as I understand, a hotel booking is requested during the visa application so I'm not sure if it's possible to go out for three or so hours. I've booked my flights, but they're still too far in the future so I can't proceed with the online application.

Also, I'm not travelling on an Australian passport so I can't get the VOA at the moment.

Cheers!

On the Qatar Embassy website, in the Visa section, there's a section referring to a Transit Visa, with the following description:
"Applicable in special situations - for 2 days - and not for transit travelers who do not need a pre-arranged visa and are allowed to enter Qatar under the sponsorship of the concerned airline company, provided they have a stop in Qatar for more than 6 hours, until their departure to thier destination according to next pre-determined flight schedule dates."
It looks like you should be able to get something that suits you there - refer Entry Visa Application | Embassy of the State of Qatar
Hope this helps.

Our stay is overnight. Am sure of VOA but unsure if it's gratis.
