I have flown between SYD and SFO (and... ugh... LAX) about 150 times with UA, and only 6 times with with QF, in First Class. As a loyal UA flyer and Global Services member, I am loathe to say that the QF experience is; for the moment at least; superior to that on UA.
On QF the food is better. The wines are better. The seats are better. The amenities pack (at least before the most recent 'enhancements' that have been reported here and elsewhere) is better. I haven't experienced 'bad' service on a long-haul QF flight - admittedly my sample size is quite small - but I have had a couple of shockers on UA.
Occasionally the United First 'Suites' (I don't understand why they are called that!) don't function as intended, and I would recommend that you put your seat through it's full range-of-motion immediately after boarding, so that any problems can be (hopefully) addressed prior to departure. To be fair, QF seats probably malfunction occasionally too, but it hasn't happened to me. UA's 744 interiors are looking more than a little tatty around the edges. There is a radical cabin upgrade in the works at UA, but it won't be even close to filtering through in the next few months.
As far as the on-ground experience is concerned, the RCC at SYD is pretty ordinary, and pales in comparison to QF's new First Class lounge. UA's international Flounge at LAX is comfortable enough.
Of course, after reading my comments above, you may be wondering why I even bother to keep flying with UA. There are times when I wonder why myself, but I guess it comes down to the fact that my employers reimburse me for F fares on UA, Mileage Plus is a generous FF program (especially at the 1K level and above), and when it comes to flying between JFK and SFO/LAX, United's First and Business 'Premium Service' cabins are vastly superior to any other domestic aircraft on the routes.
But in the end, if you're planning a one-off, treat-yourself First Class trans-pac, I'd go with the Qantas option.
