Vanuatu - what to do (but not too much!)

OK, the currency is sorted, the phone is sorted, the internet can remain unsorted.
Its 30 years since I was on Efate, and I was wondering what to do, where to go while we are there for a week while the flygirl celebrates a significant event ending with "0" and starting with "6".
She is planing on writing a couple of books while we are there (yes, that's how she relaxes!), and I'll wander off taking photos, but any tips on out of the way places to go/find, good food spots, or other things of interest would be appreciated.
We will hire a car for a day or two, to go to "the other side" of the island, or to other recomended spots
I just sent an email to air vanuatu asking for exit row seats, and it looks pretty good that we might have got them.

I was in Port Vila about 2 weeks ago and found a couple of good restaurants. Local buses still the best way to get around.

If you like chinese food then go to Harbour View, their chilli mud crab is outstanding. Do not go to the Flaming Bull Steakhouse, the food is rubbish and a total rip-off. The locals told me they will not go near it.
