Rydges and its offshoot Atura Hotels have an April 2019 sale on at present: up to 35 per cent off its flexible best rate for a stay of three nights, and a smaller discount for a two night stay.

It isn't limited to just Easter, but all of April 2019.

Looks like it excludes the super trendy, higher priced QT Hotels, and naturally excludes Thredbo. All other Australian and NZ hotels appear to be included.

With a quick search for arrival at Rydges Sydney Central on Easter Saturday and departure on Easter Tuesday a three night stay (I gather without breakfast) cost $167 a night that the site rounded down to A$500.

Some other properties are cheaper.

Some of its owned or managed hotels have been renovated; others, like the non-airport Adelaide one are going to be, in the latter's case from March 2019 (though it'd be normal for works to be suspended during Easter).

Check Google, TripAdvisor and other review sites to see how particular hotels rate. I've never had a bad experience at a Rydges hotel, but I won't have stayed there as often as some AFFers.

This is a good sale for those who like watching planes at Sydney Airport (provided one doesn't just get a car park "view" room: perhaps putting a note in the booking process may help to avoid that) or staying in a different city, including in school holidays.

Rydges has two ideal hotels (Bathurst NSW and would you believe Tailem Bend, SA) for those who love motor racing or cars.

Rydges also has a surprising number of Australian hotels it manages in places one might not expect, such as Mackay. Other recent additions like Geelong may be owned by the Event Hospitality company.

It's also got a growing portfolio of hotels at major Australian and NZ airports, perhaps the best coverage of any hotel group for direct access to terminals.

See the website and subscribe. You must join the free Priority Guest Rewards program to obtain the maximum discount.

I booked Adelaide Airport Atura before the sale :(

And like a true idiot I forgot about using points at the Rydges in Adelaide and booked Ibis styles - gets awful reviews but it was cheap and I'm only there to sleep a night. However a points booking would have been cheaper.
