I have to travel PER-SIN in September.

What day of the week would have the best chances of an upgrade?

I'm guessing I should not travel on Fridays or Mondays.

I would be taking QF77 and QF78

Any other suggestions or dates to avoid (eg school hols)?

Also, has anyone taken J*-valuair from SIN-CGK? Any issues with getting QFF points credited?

Look for those flights with the Highest D/I availability.

First check around the dates you wish to travel and then look at the next few weeks from today - correlate the days of the week. Avoid any days with D0's.
