I am sure that One World carriers share data between themselves about their passengers.

Curious to what extent they share data?

Would a CX flight crew see the same things as QF flight crew about a QF FF or do they simply see person X is OW emerald

In short, no.

The operating carrier, if different from the frequent flyer program, would only see your status marked in the reservations system. This is the same outside OW also.

QFF flying QF however, they have their database on iPad (internationally) with a number of interesting metrics on you, which may or may not include your favourite drink or other personal preferences. I was alarmed when QF F crew knew what company I worked for and asked more about it. I guess it's a good thing but some may find it a bit creepy.
 
I couldn't imagine QF sharing any more than the bare minimum with CX
