Minimum connection time - Narita between Terminal 1 & 2

I thinking about doing this ....

1. SYD > SIN > NRT with SQ arriving at NRT 8:00 at terminal 1. J redemption.
2. NRT > HKG > JFK with CX departing NRT 10:50 at terminal 2. Cost of J is around $3K - $3.5K only.

Since its SQ / CX and OneWorld / StarAlliance my bags won't be checked thru. Is 2:50hrs enough to
gather my bag, clear security etc at terminal 1 then bus to terminal 2 on separate tickets?

In a word, yes.

IMHO the Japanese are so efficient when it comes to transfers / connections I'd be confident that 2h50m would be enough time (based on the assumption your SIN-NRT arrives on schedule).
 
Normally yes, as long as there aren't delays in customs/immigration and you don't have a NRT police officer decide to practice their English skills with you.
Depending on the time of day, the land side transfer buses can take between 5 and 20 minutes to arrive.

A few years ago, I had HEL-LHR-DXB-LHR-HKG-NRT-SIN-PER-MEL non stop with a ticket change in NRT (both oneworld tickets). I checked the bag to LHR and put it in storage there for the DXB turn. Checking in with QF for the -HKG-NRT flight, they would only check through to NRT. So I had to enter Japan, collect bags and recheck.
I was delayed at immigration while the agent tried to make sense of why I was only entering the country for 2 hours while connecting between HKG and SIN. Then while I was making my way upstairs to JL check in, I was stopped by a police officer for a "passport check" who was just picking random gaijin to test his English skills on.
