The Park Hyatt gets a tick from me
The Intercontinental down on Collins Street, with Rialto/Vue de Monde next door is also a good place, if you get the Executive Rooms at the front
 
Park Hyatt ... with breakfast a 5 min walk away at the The European.

I really dislike showers over the bath too

For those dates you can stay at the Park Hyatt using a Hyatt Prive rate (same cost as the standard rate) for $315/night - I know where I'd be staying :):):)
