BYO Lunch

When I am working away I cook my own curries or if in Tassie my spicy wallaby bolognese sauce with spag.Often get comments on how good my lunch smells.
The cooking is easy.

Left overs can be good, otherwise bulk cook things like soups, pastas etc then freeze them. Easy to grab one from the work freezer in the morning.

Nothing beats a fresh bread sandwich. Currently the flavour of the month here is whole meal bread, cholesterol reducing spread - tastes like butter, pre sliced Jarlsberg cheese and hot tomato chutney. A real winner is when I have left over crumbed chicken tenderloins - a mini schnitzel sandwich. Ive had issues with bananas not lasting so I’m currently buying season fresh crisp apples.

I do a lot of ham and cheese toasties at the moment. Chicken and salad sangas are also good, just assemble right before you eat so they dont go soggy.

As I often don't know if there's going to be a microwave where I end up on the day, the go to is a ham, cheese and salad roll. Although I've got roast pork this week. It's pretty easy to just pick the deli meat on sale that particular week.

Toasted sandwiches are excellent. One of my comfort foods. Trouble is I have to limit my bread intake.

Hubby doesnt like left overs but I use to always pack hubby:

Fresh salad (in Tupperware, he was well trained to ALWAYS bring back every day)
Can of tuna (simple olive oil type, not the smelly flavors type)
Crackers like vitawheats or salada ect
Couple of slices of cheese or cheese sticks (I would cut from block cheese that he liked)
Muesli bar or choc snack or protein balls (home made)
Fruit

Sometimes would break it up with ham or roasted chicken ect and he would pick up fresh bread that day on the way to work.

I used to work near a Vietnamese bakery and would get fresh rolls for lunch and then use my margarine and Vegemite kept in the work fridge.

Cheap and delicious.

I have about 6 different meals I make, do it on a Sunday night and make enough for the week.

Found a new recipe on the weekend for 2 dishes, tried both and Mrs Flashback approved.

Both vegetarian (I'm not but she is so keeps it easy), an aubergine and chickpea daal and a lentil bolognese soup.

Those recipes look good, especially the dhal. As we eat meat, it would make a great second curry at dinner.

Lots of soups in the freezer in single portion size and off to work with a couple of pieces of fruit. Mind you with the weather in Adelaide this week the idea of cooking doesn't appeal much

Lunch time is one time of the day I don't want eat cooked meals.

Sandwich, fruit or salad are my preferred options.

Generally I make a fruit salad that lasts up to 3 lunches. Otherwise good old left overs.... just finished bacon & egg pie. Now starting on the fruit salad.

Good ideas
Maybe I’ll start with soup and fruit

The tearoom has bread

I used to do BYO lunch but I’m really bad a making sure the Tupperware comes home. Eventually stopped cos I could not remember which Tupperware belonged to me

he was well trained to ALWAYS bring back every day)

One of our previous staff tea rooms was stocked with frozen bread which invariably had an expired use by date. They were that tight...
