Please give each one a chance, as they are not all flapwits. Many IMHO are just doing the best they can to do a job that requires them to enforce debatable rules. :)

Always do, always get the same rude tone, and I'm usually pretty easy going...
I'm also pretty sure it's not me as I never have any issues with security screeners in other countries.
 
It's worth noting, for those who go through airport security countless numbers of times in a day (or through customs etc) it's very easy to forget things that have ended up in your bag.

While we're sitting on the plane counting down the time until landing with plenty of time spare to complete inbound immigration/customs cards etc, the crew are sitting up the front working (often very hard) and little things like inbound cards are quickly filled out at the last minute. There is nothing more frustrating than an entry level staff member like this lady (or worse still, the staff at the security checkpoint) having a go at experienced crew members and telling them "they should know better". The Captain has just delivered 150 people safely to their destination after who knows how difficult a flight. The banana in his bag was probably the last thing on his mind.
 
The more you travel the more savvy customs and quarantine assume you are. Lets say I'm a young dumb Bali bogan on my first trip overseas. I bring back too many cigarettes. Very simple to fein ignorance.

However the real mal has been through customs more times than I care to recollect. Of course the assumption is that I know the rules inside out.

Btw the main difference between the two examples above is that mal is likely to bypass customs checks anyway... but he will get pulled up eventually.

Bali mal would probably be given a warning and have cigs confiscated and a warning. Real mal would likely be fined.
