Looking to fly from anywhere in Aus to the US/Canada in April 2020 (either F/J class, 1 pax). The final destination will be Cancun in Mexico but happy to pay for those flights. Have 610k Velocity points to burn.

Earliest travel date is 3rd April and can return anytime after 28th (incl).

Happy with stopovers/long layovers/via AUH, SIN etc, just prefer F or J class.

Have you checked availability with VA around those dates?
95,500 Velocity points SYD-LAX in J.
Otherwise you could transfer your Velocity points to KrisFlyer and take a hit on the transfer.
SYD-SIN-LAX for example is 121,000 Krisflyer miles (187,550 Velocity points)

Good luck April is AU school holiday and VA options will be limited. As @jase05 suggests take the hit and go SQ.
 
I had previously been searching the VA website to check availability every few days but no luck. Called up VA to check availability with EY, SQ, VS/VA etc and they had nothing, but the call taker seemed to check way too quick so didn't buy it. Called back and got someone different, after a while they found two seats on SQ J BNE-SIN-LAX for ~270k return. Pretty happy with the result.
 
Realistically your best chance is to wait until a few days before and you'll pretty much be on point. That is risky though and then finding a return will be while you're away or go the upgrade route.
I doubt very much they will just appear now as the dates are too close. Better off with other options.
